I grew up in Scotland .My dad was a baker and confectioner.We called it current slice.It had no raisins or apples in it Just a little sugar!mixed spice and some cornstarch to thicken the fruit a bit.He made his with flaky pastry.I still make it occasionally or at Christmas.

This is a old family favourite and was also made with flaky or puff pastry in our house. The filling was 1/2lb currants, 1 1/2 oz sugar, 1 dessert spoon black treacle and 1 teaspoon of flour to thicken. Mix all filling ingredients together and heat gently adding flour to thicken once fruit is softened and treacle liquid. This was so tasty and moist with just the right amount of sweetness. Also called flies cemetery in our house or fruit slice if my mum was trying to impress. ?

In Ireland when I was growing up these could be bought in my local cake shop. They were sold as fruit slices but called squashed fly cakes by us kids. The story was, all the dried fruit dropped on the floor was swept up at the end of the day and used to make these. Any dead flies that happened to be there would not be noticed in the fruit. They were the cheapest cakes and mostly scorned by the kids on the way home from school, but I always had a secret liking for them. I will definitely take a walk down memory lane and make these. But with no flies!

1. You'll need to cut the following pieces, two 14" circles, two 2" x 4" strips and then four 22"x2" strips cut on the bias! So how I did it was I folded my fabric in half and cut out my circles at the very top and then my 44x4 strip along the fold right beneath. Then, I opened my fabric and cut four shorter 22"x2" strips on the bias (that means on a diagonal). I did this because I didn't want to buy too much excess fabric, but if you bought more than 1 1/2 yards you could cut the longer strips more easily!

2. Cut out the corresponding fruit pieces from your felt:

Citrus Slices: One 10" white circle and eight wedges from the color of your choice

Watermelon: One 10" white circle, one 9" red circle, a bunch of black seeds

Dragonfruit: One 10" white circle with a wavy edge, a bunch of black seeds

Kiwi: One 6" white circle, a bunch of black seeds

Citrus slices: Stitch wedges to the white circle, then stitch the white circle to the fabric circle.

Watermelon: Stitch seeds to red felt (I did this at the end and it was annoying, definitely recommend starting first!), stitch red felt to white felt, stitch white felt to your fabric circle.

Dragonfruit: Stitch seeds to white felt, stitch white felt to your fabric circle.

Kiwi: Stitch your white felt to your fabric circle, stitch the seeds to the fabric circle, surrounding the white felt.

I love these cute fruit pillows! These look super simple to sew with our machine, if we just find some bright material to make them with. Every time I post a recipe with dried citrus involved, I get questions asking how I made my dehydrated citrus slices without a dehydrator. While this process is rather time-consuming (3-6 hours total) it's VERY easy because most of that is hands-off time just waiting for the citrus to dehydrate.

This step is crucial to perfectly dried citrus! I recommend using a mandoline so you can guarantee the fruit is sliced evenly. However, if you have great knife cutting skills using a very sharp knife also works.

Otherwise, they will mold and now keep as long as they should. It's also important to note that the larger the citrus, the longer it will take to dehydrate. That means lemons and limes are likely going to be done before larger fruits like oranges and grapefruit!

Sorry to hear it didn't work for you. Did you use convection settings? It sounds like you did not if it took that long which is crucial for this recipe to work in the time frame listed. It's also crucial to cut the slices thinly or it will take too long and they will burn. Also, as mentioned in the blog post, grapefruit will take much longer than lemons to dehydrate. They also will both be slightly bitter naturally as no sugar is being added to them. Hopefully that helps if you decide to try again!

You can really mix and match the filling to your taste. We stuck to currants and raisins but I have seen recipes that include other dried fruits as well. When we were testing the recipe we ran out of raisins at one point and substituted for sultanas and it was still just as delicious!

3. Attach the zipper

Sandwich the layers as follows: lining fruit piece right side up, then lay the zipper and line up with the top edge, then place the front fruit piece right sides down. Pin in place. With your zipper foot, stitch all 3 layers together. 

Repeat with the other lining piece + background fruit shape.

4. Iron open + top stitch

With your iron, press the zipper seams open so that they lay flat. Then top stitch along the top parts of either side of the zipper, sewing the lining to its respective outside fruit shape.

8. Finish! 

Turn the bag right side out and polk all of the corners of the fruit shape with your fingers to smooth the edges. Then turn edges of the lining opening (where you pulled the bag through) inward to mimic the seam allowance and top stitch closed.

Press the bag with an iron + fill with goodies for the beach! ?

To make the fruit filling, pour the orange juice into a small saucepan and add the sugar and fruit. Bring to a very gentle simmer and cook for 5 minutes, until the fruit has plumped up. Take off the heat and allow to cool.

Spread half of the shortbread mixture in the bottom of the tin and press down well with the back of a spoon. Spread the fruit evenly over and cover with the remaining shortbread dough. Press down well with the spoon. Prick all over with a fork. Place in the centre of the oven and cook for 25-30 minutes until lightly golden. Sprinkle with caster sugar and cut into squares. Leave to cool completely in the tin.
