Saint-Nicolas est le protecteur des enfants et des écoliers. Le soir du 5 décembre, n'oublie pas de mettre tes souliers à côté de la porte avec un verre de vin chaud pour Saint-Nicolas, et des carottes et des sucres pour son âne. Don't forget to leave out your shoe on the night of the 5th of December. Be sure to leave a glass of hot wine for Saint-Nicolas, and some carrots and sugar pieces for his donkey. The next day your shoe may be filled with traditional goodies such as chocolate, chocolate coins, gingerbread, oranges and socks. Si tu n'étais pas sage, attention! Il y a le père Fouettard! Watch out for Père Fouettard if you did not behave! This holiday is celebrated in Belgium, Switzerland and in France, particularly in the regions of Alsace and Lorraine.

Aujourd'hui vous mangez traditionnellement une galette des rois avec une fève à l'intérieur. Pour couper la galette, le plus petit ou la plus petite doit se mettre sous la table et il/elle dit: "Le morceau que tu coupes va être pour maman, pour papa, pour ma soeur et l'autre pour moi." Vous coupez aussi une part pour les pauvres. La personne qui trouve la fève devient le roi ou la reine pour la journée. Elle porte une belle couronne!

Of course each French holiday has its special foods. Crêpes are served today, and you have to follow the superstition when you prepare them--la poële à la main droite et une pièce à la main gauche.

According to Christian faith Le Mardi Gras marks the last day before the official start of le Carême with mercredi des Cendres (Ash Wednesday). Le Carême lasts for 40 days during which Christians refrain from eating meat or indulging in sweets. Typically, people "give something up" during these days leading up to the celebration of Pâques (Easter). Mardi Gras is, therefore, the last official day to indulge and to 'fatten up'.
Nouvelle-Orléans en Louisiane organise une très grande fête chaque année pour célébrer Mardi Gras. Mardi Gras à Nouvelle-Orléans est connu (known) partout dans le monde! Mangez une galette des rois (King cake) et trouvez le bébé! Portez les colliers (beads) et les couleurs typiques de cette célébration: le vert, le violet et l'or.
Le violet symbolise la justice.
Le vert symbolise la foi (faith).
L'or symbolise le pouvoir (power).
