This Brown Butter Blackberry Pie may have been thrown together last minute, but the out of this world flavors were worth the time and space it took to make.

This Brown Butter Blackberry Pie is a culmination of celebrating this historic eclipse and my sweet hubby's equally important 41st birthday. He's a giant space nerd, so the timing of this eclipse is pretty impeccable. He's also a big pie guy, and a handmade berry pie is a guaranteed path to a total eclipse of his heart. I'd been considering a browned butter crust pie for months, but I've been waiting for the right recipe to arise. Brown butter and blackberries just made sense, and so a star was born; Brown Butter Blackberry Pie.

With the warm, slightly smoky notes of the brown butter crust, the depth of flavor flirts with the savory side and offers a comforting blanket for the tart blackberry filling. The filling is sweetened with rich brown sugar, brightened with lemon, and then mellowed with a hit of smooth bourbon. In this Brown Butter Blackberry Pie, the berry filling snuggles into the brown butter crust with flavors that align like stars between sweet and savory. As a nod to the eclipse, I shaped the buttery yellow pie shell into a shining sun with pointy crusty rays. The top crust is a simple, round, full moon shape fully eclipsing the berry filling before baking. The rich and nutty crust settles when baking and exposes a ring of vibrant blackberry filling around the edge of the moon crust resulting in the tastiest eclipse of all time.

Blackberry filling is sweetened with rich brown sugar, brightened with lemon and then mellowed with a hit of smooth bourbon. The warm, slightly smoky notes of the brown butter crust flirt with the savory side and offer a comforting depth of flavor to the tart blackberry filling.

Early season blackberries and floricane-fruiting raspberries ripen shortly after strawberries, which makes them ideal crops to extend the berry harvest season. Within the southern region of the US, yields and adaptation vary based on location within the state. Harvest season also varies by state. For example, early ripening blackberry cultivars will be harvested two to four weeks earlier in southern Georgia than in North Carolina.

Although the fruit color of blackberries is standard (Figure 2-1), yield, fruit size, shape, plant architecture, and the season of ripening of cultivars can be quite diverse. Additional information on the blackberry cultivars listed below can also be found online. The recommendations in Table 2-1a, and Tables 2-1b, 2-2a, and 2-2b are based on research trials and grower experience throughout the southern US.

You can find several blackberry species in the wild in Oregon. Only one, the western dewberry (Rubus ursinus) is native (Figure 2). Plants have a trailing growth habit with purplish-colored stems. There are separate male and female plants; females produce oblong fruit with small seeds and a wonderful aromatic flavor.

It is important to choose a cultivar adapted to your region. Various types of blackberry differ in fruiting season and cultural requirements. Even cultivars within the same type (trailing, erect or semierect) differ in fruit quality and flavor, appearance, tolerance to pests, cold hardiness, and plant longevity.

Because blackberry cultivars do not need cross-pollination to produce fruit, you only need to choose one cultivar. However, growing more than one type or cultivar will allow you to compare them, have sufficient fruit for freezing or jam, and to have fresh fruit for an extended period.

The plants of trailing and semierect blackberry cultivars should be grown as individuals because they do not produce new primocanes from the roots. Space trailing plants 3 to 5 feet apart in the row and semierect plants about 5 feet apart. Rows should be 10 feet (trailing types) to 12 feet (semierect types) apart.

Since erect blackberry cultivars produce primocanes from buds on their roots as well as the crown, plants are most commonly grown in a hedgerow (Figure 11). A hedgerow refers to maintaining the row to about 12 inches wide by removing any primocanes that emerge outside this width by pruning, hoeing or rototilling. Over time, individual plants become less evident in a hedgerow planting. Space summer-bearing and everbearing plants 2.5 to 3 feet apart in the row, with 10 feet between rows. Keep any primocanes that emerge in the row area between plants. Remove any primocanes that emerge outside this in-row area as they start to grow, as described above.
