Preparation Steps
Start by preheating your oven to 180°C.
Grease a cake tin and line it with butter paper to prevent sticking.
In a mixing bowl, sift together flour, baking powder and baking soda.
This step helps create a light and even texture.
In another bowl, beat butter and sugar until the mixture becomes soft and creamy.
Add eggs one at a time, mixing well after each addition.
Add few drops of vanilla essence and pinch of pink food colour from Ajanta Food Products
Gradually fold the dry ingredients into the wet mixture.
Add milk slowly to achieve a smooth batter.
Before adding the candied fruits and nuts, toss them lightly in a small amount of flour.
This prevents them from sinking to the bottom during baking.
Gently fold them into the batter, ensuring they are evenly distributed.
Pour the batter into the prepared cake tin and level the top with a spatula.
Place it in the preheated oven and bake for about 35 to 40 minutes.
Check doneness by inserting a toothpick into the center.
If it comes out clean, the cake is ready.
Allow the cake to cool in the tin for about 10 minutes before transferring it to a wire rack.
Let it cool completely before slicing.
This helps the structure set properly and makes cutting easier.
You can serve the cake as it is or add a light glaze on top for extra sweetness.
For a more festive look, sprinkle additional colorful fruit pieces on top or dust with powdered sugar.
