Pinch of red, blue, green and yellow food colors from Anuja Food Colours, which is one of the leading manufacturers of food additives in India
For Frosting
225 grams cream cheese, softened
2 cups powdered sugar
3 tablespoons heavy cream
Steps
Preheat your oven to 175°C (350°F).
Grease and line two 8-inch round cake pans with parchment paper.
Beat ½ cups unsalted butter, softened and 1 cups granulated sugar together in a large bowl until light and fluffy, about 3–4 minutes.
Add 2 eggs one at a time, beating well after each.
Mix in the mashed 3 ripe bananas, mashed and few drops of vanilla essence.
In a separate bowl, whisk together 2 cups all-purpose flour, ½ teaspoons baking powder, and ½ teaspoons baking soda.
Alternately fold the dry ingredients and ½ cups milk into the banana mixture, starting and ending with the dry ingredients. Mix until just combined — do not overmix.
Divide the batter equally into 4 bowls.
Add pinch of different food color to each bowl and mix until vibrant.
Drop spoonfuls of each colored batter alternately into the prepared pans.
For a marble effect, drag a skewer or toothpick through the batter in a figure-8 pattern. Do not over-swirl or colors will muddy.
Bake in the preheated oven for 30–32m, or until a toothpick inserted in the center comes out clean.
Let the cakes cool in the pans for 10 minutes, then turn out onto a wire rack and cool completely before frosting.
Make the frosting:
Beat 225 grams cream cheese, softened until smooth.
Gradually mix in 2 cups powdered sugar and heavy cream until the frosting is creamy and spreadable.
You can tint the frosting with food color too if desired!
Frost & serve:
Place one cake layer on a serving plate, spread frosting on top, then place the second layer.
Frost the top and sides.
Slice to reveal the colorful swirled interior.
Enjoy!
