2 ½ cups all-purpose flour

1 cups buttermilk
0.5 cups vegetable oil
1 teaspoons white vinegar
450 grams cream cheese, softened
For Frosting
½ cups unsalted butter, softened
3 ½ cups powdered sugar, sifted
Few drops of vanilla essence
Steps
Preheat oven:
Preheat your oven to 175°C (350°F).
Grease and line two 9-inch round cake pans with parchment paper.
Mix dry ingredients:
In a bowl, sift together all-purpose flour, cocoa powder, baking soda.
Whisk and set aside.
Cream butter and sugar:
In a large bowl, beat butter, softened and granulated sugar on medium-high speed until pale and fluffy.
Add eggs and vanilla essence:
Add 2 large eggs one at a time, beating well after each.
Add few drops of vanilla essence and pinch of red food colour until the batter is evenly coloured.
Add oil and buttermilk:
Pour in oil and mix until combined.
Add 1 cups buttermilk in two additions, alternating with the dry ingredients.
Begin and end with dry ingredients.
Mix until just combined.
Add vinegar:
Stir in 1 teaspoons white vinegar.
Bake:
Divide the batter evenly between the two prepared pans.
Bake for 30 minutes, or until a toothpick inserted in the centre comes out clean.
Cool completely:
Let cakes cool in the pans for 60 minutes, then turn out onto a wire rack.
Allow to cool completely before frosting
Make cream cheese frosting:
Beat cream cheese, softened and butter together until smooth and lump-free, about 2 minutes
Add few drops of vanilla essence then gradually mix in powdered sugar, sifted on low speed.
Beat on high for 2 minutes until fluffy.
Assemble and frost:
Place the first cake layer on a serving plate.
Spread a generous layer of frosting on top.
Place the second layer over it and frost the top and sides evenly.
Optionally, crumble any cake trimmings on top as decoration.
Chill and serve:
Refrigerate the assembled cake for at least 30 minutes before slicing.
