- 2 cups all-purpose flour

- 1 cup caster sugar

- ½ cup milk
- 1½ cups mixed dried fruits (raisins, currants, sultanas, chopped dates)
- ½ cup candied orange or lemon peel
- ½ cup glazed cherries, halved
- 2 tbsp orange juice or rum (optional, for soaking)

Method
Begin by soaking your mixed dried fruits in orange juice or rum for at least two hours, or overnight if time allows.
In a large mixing bowl, beat the softened butter and caster sugar together until the mixture is pale, light, and fluffy.
Beat in the eggs one at a time, adding a tablespoon of flour with each egg to prevent the batter from curdling.
Add few drops of vanilla essence for warmth and depth.
Sift the remaining flour, baking powder, and salt into the bowl.
Fold gently with a spatula, alternating with splashes of milk, until you have a smooth, thick batter.
Drain any excess liquid from the soaked fruits and fold them into the batter along with the glazed cherries and candied peel.
Divide the batter equally into two or three portions.
Add pinch of food colour — red in one, green in another, yellow in the third.
Bake in a preheated oven at 160°C (320°F) for 60–75 minutes.
Allow the cake to cool in the tin for 15 minutes, then transfer to a wire rack.
