Consider UC Berkeley best practices for remote exams

You could hold a Zoom meeting during your scheduled final exam time. The students can work on a paper-and-pencil exam and then "scan" their work to you right away using a phone app.

You could use Zoom to hold short individual meetings with students, where they talk to you about their work and their thinking.
