Molton
The Molton is exactly the same size as the table.
Table Cloth
It is the most visible, important part of the table laundry items and should always be lay up with care.
Napperon / Top Cloth / Overlays
Mostly the Napperon will be placed diagonally to the table cloth. Its important that the four edges of the napperon hang down on each side equally.
First place the folded table cloth on the table with the middle edge above and the two open edges of the napperon hang down on each side equally.
Hold the table cloth with the middle edge between your thump and forefinger and the lower edge between your forefinger and middle finger.
Now lift the table and swing the open part over the opposite table edge.
Then open the thumb and forefinger to free the middle edge, release the cloth and spread it evenly across the table.
Table cloth must hang down on each side equally.
When coveringa round table ensure that the four edges of the cloth hang evenly and that the middle fold of the cloth is aligned with a corner of the room.
To make a proper set up, you need experience, Practice makes you professional.
Types and purpose of linen
Tablecloths
Come in various sizes and shapes for different sized and shaped tables. They may also be in different colours or patterns, depending on the restaurant. Many restaurants have white tablecloths with a coloured overlay or runner over it
Table runners
These are placed over the tablecloth for decoration.
Overlays / Top Cloth
These are placed over the tablecloth to protect it. They are smaller than tablecloths and therefore are easier and cheaper to wash. Overlays are usually in a different color from the tablecloth
Napkins
These are usually white, and folded in the style of the restaurant
Place mats
Place mats are used in some establishments instead of table cloths. They are made of material or plastic – which is used in some family style restaurants and can easily be wiped clean
Table setup refers to the arrangement and organization of elements on a dining table in preparation for a meal. The way a table is set depends on various factors, including the type of dining experience (casual, formal, fine dining), the number of courses to be served, and cultural or regional traditions. A well-arranged table enhances the dining experience and contributes to the overall ambiance of a restaurant or event.
Here are the key components of a typical table setup:
Place Settings:
Each place setting includes a plate as the central element. Depending on the formality, it may also include a charger plate underneath the dinner plate.
Individual settings for each guest include flatware (forks, knives, spoons) arranged in a specific order, typically based on the order of use during the meal.
Glassware:
Wine glasses and water glasses are arranged above the knife and to the right of the plate. The wine glasses may include options for red and white wine, as well as a champagne flute for certain occasions.
Napkin:
The napkin can be folded and placed either on the plate or to the left of the forks. In formal settings, napkin folding styles may vary.
Flatware Placement:
Forks are generally placed to the left of the plate, knives to the right, and spoons to the right or above the plate.
The flatware is arranged in the order of use, progressing from the outside in, with the first course utensils on the outer edges.
Bread and Butter Plate:
If bread is served, a small bread and butter plate with a butter knife may be placed above the forks.
Dessert Utensils:
Dessert utensils, such as a fork and spoon or a fork alone, may be placed horizontally above the plate or brought in later with the dessert course.
Centerpiece:
A centerpiece, such as flowers or candles, may be placed in the center of the table. In fine dining establishments, the centerpiece is often low enough to allow unobstructed views across the table.
Tablecloth and Linens:
A clean and well-pressed tablecloth may cover the entire table. Linens, such as placemats or table runners, can add a decorative touch.
Place Cards:
For formal or special events, place cards with the guest's name may be arranged at each setting.
Condiment and Salt/Pepper Shakers:
Depending on the cuisine and service style, condiment containers and salt and pepper shakers may be strategically placed on the table
