My name is Eric Gayraud, I am the Cheesemaker of 365 Fromages, and I have been living in Valbonne for more than 30 years, but I am from Ruthenay at heart, the son of a Craftsman-Butcher... this may explain it.
I like to cook and share my passion for culinary arts.
I am strongly attached to good products and wish to make you benefit from their quality and thus humbly participate in their safeguarding. I consider myself more of a cheese maturer than a cheese refiner master: the difference is literally minor, but important: to offer you mature cheeses and leave the title of refiner to whoever is entitled to it.
Wood is undoubtedly my favorite material, it is a noble building material, it gives off such different and pleasant scents when it is worked. Wood is close to Cheese, because the numerous species bring particular flavors in the maturing of cheese: oak for Roquefort, spruce for Fourme de Montbrison among others.
I devoured the Millenium trilogy by Stieg Larsson, so much so that I wondered what I would read next....
I like Corsica, I went there many times, it is a site that I prefer because we can reconcile sea and mountain in a protected setting where nature expresses itself to its true value.
Otherwise, I finally crossed the Atlantic in 2017 and I went to the 100th meridian East ... and my next trip will be Saint Petersburg, one of the "Venice of the North" ...
During my trips, I do not fail to visit cheese producers and I hope to share their products with you.
