We developed functional condensed milk using coconut milk and soy milk. Plant milk based condensed milk can be one of the best substitutes of animal milk based condensed milk. We formulated five formulations including soy milk and coconut milk (0:1, 1:0, 3:2, 2:3, 1:1) and found that formulation C (soy milk: coconut milk = 3:2) is more acceptable that other formulations. Because formulation C has less moisture content and fat content than other formulations. Mixing and condensing coconut milk and soy milk simultaneously was very challenging. We added 3.5% whey protein powder of the mixture. We evaporated the mixture after adding 0.5% baking soda. We had to use vanilla essence to balance flavor and color.
