Training Description
This comprehensive training program equips participants with the knowledge and skills necessary to excel in coffee quality evaluation and cupping. Through a combination of theoretical and practical sessions, participants will gain a deep understanding of coffee from bean to cup, allowing them to effectively assess coffee quality and contribute to the Ethiopian coffee industry.
By the end of this program, participants will be able to:
Demonstrate a thorough understanding of coffee as a botanical product and its journey from farm to cup.
Evaluate green coffee beans for physical characteristics, defects, and potential quality.
Understand essential lab equipment for quality assessment.
Roast coffee to specific profiles and understand the impact of roasting on coffee quality.
Grind coffee appropriately for cupping protocols.
Prepare cupping sessions following industry best practices.
Conduct sensory evaluation of coffee using established cupping protocols and terminology.
Get familiarized with the Ethiopian Commodity Exchange (ECX) coffee grading system effectively.
Classify and grade Ethiopian export coffee based on established standards.

Assessment and Certification
· A combination of written exam, assignments, and practical cupping evaluations will be used to assess participant learning throughout the program.
· Required Exam and Passing Score:
o Practical Exam ________________ 70%
o Written/Theoretical ____________30%
o Pass mark: minimum 60% out 100%
o It is mandatory to record a passing score for the practical exam
· Successful completion of the program will lead to certification as a Coffee Quality Evaluation & Cupping Professional.

· Regular ETB 35,000.00
· Evening & Weekend: ETB 45,000.00
