I made this for my husband AND my dad for Fathers Day and they both said it was the best rocky road they have tasted. I removed the coconut and added broken up Digestive biscuits and it was PERFECT! Thank you.

I first heard of these from my dining companion Laura aka baking Wonder Woman. She mentioned that I should make a Snickers Rocky Road in passing and unable to hear the sentence that followed thereafter that I asked her to back up. A what rocky road? I haven't eaten a Snickers bar for about ten years and from memory there were nuts, caramel and nougat. It wasn't bad and it was the one I preferred to its sister product the tooth achingly sweet Mars bar. I asked her to email me her recipe butwell of course I couldn't wait. When we went shopping I saw Snickers bars on sale for $1 each and shoved six into the trolley and bought some roasted unsalted peanuts and chocolate and I had the makings of an adventure.

I made it-it was terribly quick and was quickly chilling in the fridge after about 10 minutes of leisurely Sunday morning pottering about in the kitchen. It set quickly and I cut it into pieces. I fit them into a box thinking that they would make a nice gift for a friend. Giving cakes is hard as they go stale quicker. I cut off a sliver of one piece-a piece with a good cross section of marshmallow, peanuts, chocolate, caramel and nougat. Holy macaron it was good. Ungodly so, in only the way thatsuper sweet and crunchy nubbly rocky road could be. And here I am passing on the recipe to you in the hopes that under your chic exterior you might like it too.

My favorite type of ice creams has always been ones with crunch and with chocolate, so naturally I have been a fan of rocky road for years. I wanted to create a version that was vegan and healthy. This one is full of good fats from the coconut milk and almonds so it really fills you up! It is so easy to make and is ready in under 5 minutes. You can either eat it right after you blend it up or store it in the freezer in an airtight container for up to two weeks.

Thank you so much! I can't believe the amount of positive response from gifting it to friends, coworkers and family with a recipe that was easy for me as a beginner. One time I substituted pistachio with cashews for a non-lover and since the cashews at hand were unsalted I added more salt to the choco-butter. It unexpectedly worked great! For the last batch I didn't have enough butter anymore so it crumbled when cutting the "road". Those were gifted as "rocky pieces" in glass jars and looked equally striking. What a hit!

Hi Sadia and PUL team! I was thinking about making this rocky road as a Christmas gift and I had a question for you: why do we add butter to the chocolate? And secondly, can it be replaced with coconut oil?

I swapped the dried cranberries for dried abricots and the roasted salted pistachios for roasted salted almonds, it's really simple (even the cutting-in-bars-part) and the rocky road is incredibly delicious!

Amazing! Absolutely best rocky road I've tried. I didn't have dried rasberrys so I just left them out but it didn't matter. I'd be interested to try gingerbread cookies next instead of biscoff to make it even more christmassy. If anyone tries it, let me know!

Stop everything. Just made the Xmas rocky road... I forgot the maple syrup and switched the speculoos to French Petit Beurre style biscuits (because of the person's tastes I made it for). I used dried fruits I had on hand (here dried apricots), a mix of pistachios, almonds and hazelnuts... and it's... D-E-L-I-C-I-O-U-S. I do not like marshmallows, and I'm not super fan of sweet things... but this bar is incredible. I'm sure it's going to be a hit in my Xmas gifts basket. Thanks for the recipe.

You can omit the mix-ins and just use the base to make a delicious chocolate ice cream, but I highly suggest using them to create that beloved rocky road taste. I like to add small marshmallows, mini chocolate chips, and chopped Spiced Candied Almonds. These mix-ins take the ice cream to another level with the added crunch and sweetness. Plus the almonds add a bit more spice to compliment the cinnamon and chocolate. I use a natural and gluten-free brand of marshmallows called Elyon for ease, but it contains sugar. You can easily make a batch of homemade honey marshmallows beforehand.
