@dnorman It looks like you're planning to download the individual installers for each app. That's going to result in an excessive amount of data being downloaded if you're installing more than 1 of the main apps.
Below is a plist file you can import into a Jamf config under Applications & Custom settings. Because the Office apps are now sandboxed you can't edit the installer.pkg any more. So you have to use something like below to select what gets installed. I'm using this for Office 2019 at the moment in a lab.

If the plist is incorrectly named it will import the wrong domain name and must be edited in the text field. com.microsoft.office.plist is what you should name your file before import.

Sounds like the exe is just a wrapper around a MSI. I would first consult the docs for the install if available. Worse case you may need to extract the MSI from the exe. Then you need a tool to view the property table of the MSI. The hope is there is a propery you can pass to the installer to auto acknowledge the EULA. If not you may be out of luck.

This app is virus-free and really does only what it promises to do. It does not have any kind of telemetry or any unjustified communication with internet. There are just three cases when an internet call is made by MSIX Hero: (1) checking for the most recent version available (which can be triggered only manually by the user, there is no automatic check done by the app), (2) attaching timestamp to signed packages (if timestamp server is configured), in which case signtool.exe contacts a timestamp server configured by the user and (3) getting the list of accessible timestamps from a public gist. Note that Windows 10 may do extra stuff on its own (general telemetry and reporting, app installer update checking, Defender signatures update etc.) but they belong to Windows 10 and are not a part of MSIX Hero.
