Goji Berry, Coconut and Nut Medley Granola

Ingredients List
Dry Ingredients Bowl
1.5 cups rolled oats (do not sub with quick oats)
1 cup of nuts of your choice (I use a ¼ cup of each: sliced almonds, pecans, cashews and walnuts)
¼ cup of shredded coconut
1 teaspoon cinnamon
Optional:
⅓ cup large coconut chunks
¼ teaspoon nutmeg
¼ teaspoon minced cloves
Wet Ingredient Bowl
¼ cup coconut oil
3 tablespoon maple syrup
1 tablespoon brown sugar
½ tablespoon of vanilla extract
½ teaspoon salt
Final (Optional) Mix Ins
⅓ cup raisins
⅓ cup goji berries

Step-by-Step Instructions
Preheat oven to 325F
In a medium mixing bowl, mix together items in the Dry Ingredients Bowl List:
a) 1.5 cups rolled oats,
b) 1 cup of nuts of your choice,
c) ¼ cup of shredded coconut,
d) ⅓ cup large coconut chunks
e) 1 teaspoon of cinnamon.
f) ¼ teaspoon nutmeg
g) ¼ teaspoon minced cloves
In a small microwave safe bowl, combine the items in the Wet Ingredient Bowl list together and melt in the microwave for 30 seconds. If it is not fully melted, microwave in additional 15 second increments.
a) ¼ cup coconut oil,
b) 3 tablespoons maple syrup,
c) 1 tablespoon brown sugar,
d) ½ tablespoon vanilla extract,
e) ½ teaspoon salt
Mix the liquid mixture into the dry ingredients. (Do not be alarmed if the mixture appears dry - you can add more oil if you’d like, but it will also turn out fine as is)
Line a 9” x 13” baking sheet with parchment paper and carefully lay out the granola mixture
Place the baking sheet into the oven. Bake for 40 minutes and in every 10 minute increments.
After the bake time has passed, the granola should be tan colour. Let it cool on the counter for 5-10 minutes. Then mix in ⅓ cup of raisins and ⅓ cup of goji berries. (These items are added at the end as they will become rock hard if you bake them for the full duration)
Once the granola fully cools, transfer it to an airtight container or 1L mason jar.
Enjoy the granola with milk, on yogurt, on ice cream, or even on it’s own!
Additional Notes / Tips
The fundamental formula simple:
Oats + Nuts + Dried fruit + Oil = *Granola*
I eyeballed this ratio - but ultimately, every granola recipe will contain these fundamental ingredients and approximate measurements.
What I love about granola is that you can substitute based on what you have in your pantry. No coconut oil, sub for olive! Allergic to nuts? Pull that out and throw in pumpkin seeds - what you want is crunch! Granola is not stubborn except for the fact that you must use rolled oats. Unfortunately quick oats will not yield the end result you’re looking for. You won’t regret buying these oats anyway - they are more chewy and also less processed than quick oats.
Ideas for other add ins:
Orange zest - you can zest an orange and freeze the zest and throw it in when it calls. In my opinion, cinnamon, nutmeg, cloves and orange zest and BFFs that go everywhere together
Powdered ginger for an extra kick - I recommend trying with 2 teaspoons in this recipe and upping the anti if you don’t taste it
How to save your granola if things go wrong
Salty granola? Been there, done that! Resolution: don’t add salt to a second batch and mix the two together
It’s been a while since my last post! I know I had committed to one recipe a month, but perfection became the enemy to progress. This recipe currently has no photos of the product, but I’ll add it in when I get the chance. Better late than .. not having a post at all. After listening to Atomic Habits, I want to build better habits, and just show up. So here goes to committing to writing more recipes in 2021. Cheers!

While in lockdown, my team does a monthly virtual team building activity where the host teaches everyone else how to make a dish of their choice. When my turn was approaching at the end of November, I Googled countless edible DIY gifts ideas as I thought it would be nice to learn how to make and gift treats for the holidays. In the current pandemic climate, I thought getting inspiration on a homemade gift would be useful as it is both personal, memorable (esp after you throw it in a cute mason jar), cost efficient, and not to mention - tasty!
When I watched a video of a lady making granola as one of her DIY items - a light bulb went off! What came after was a chain effect of recipes to see what I could integrate into my iteration.
My approach to sourcing new recipes is always the same: 1) Go on Google 2) Enter the recipe I am trying to make 3) Select the one with the most reviews 4) Make/ Adapt recipe 5) If the recipe is good, I save it to my Google excel sheet (more on that in a different post). After browsing a few, I liked Megan’s Granola - my recipe is adapted from hers with a few touches of my own.
After doing a test, it passed the Prince Robert test and we’ve been both hooked since!! This batch usually lasts us for a week. It has also been a hit as gifts amongst friends and family! If you received one and are wanting to make you own - I’m glad you enjoyed it enough to want to make it! Pondering inquiries on how I made something is always a kind compliment, and a nice tickle to the ego.
