Glossary

Al Pastor - “Shepherd Style” is a preparation of spit-grilled slices of pork originating in the Central Mexican region of Puebla and Mexico City

Asada - roasted or grilled and sliced beef, usually skirt steak, flap steak, or flank steak though chuck steak can also be used. Usually marinated then grilled or seared to impart a charred flavor.

Barbacoa - an authentic Mexican dish typically made with beef, goat or lamb. It is traditionally seasoned with dried chilies and spices and slowly cooked until perfectly tender.

Birria - regional variation of barbacoa from western Mexico, mainly made with goat or beef. The meat is marinated in an adobo made of vinegar, dried chiles, garlic, and herbs and spices before being cooked in a broth.

Carnitas - literally meaning "little meats", originated in the state of Michoacán, Mexico. Carnitas are made by braising or simmering pork in oil or preferably lard until tender.

Campechano - Steak & Chorizo "Campechanear" is a casual Mexican verb that means "to mix up".

Chorizo - a highly seasoned chopped or ground pork sausage Mexican chorizo is made with fresh (raw, uncooked) pork, while the Spanish version is usually smoked.
