Foreword
Cooking ain’t about fancy plates, expensive ingredients, or doing things just so people can say it looks good. Cooking is about feeding people. It’s about making sure nobody leaves the table hungry, and everybody feels like they were taken care of.
I cook for a real house, not a show kitchen. We’ve got six kids, and everybody eats differently. Some of our kids are picky, which means I stay flexible and ready to adjust. That taught me early on that cooking isn’t about rigid rules—it’s about knowing your people. Sometimes a recipe gets simplified, broken down, or modified so everybody at the table can eat, and that’s real life.
These recipes come from that mindset. They’re the kinds of meals I grew up on—food that sticks with you, food that brings people together, food you make when you want to show love without saying a word. Whether it’s a pot simmering all day, a skillet getting hot, or a slow cooker doing the work, the goal is always the same: bold flavor, no shortcuts, and food that feels like home.
You won’t find complicated techniques in here. If something needs patience, I’ll tell you. If it needs seasoning, I’ll tell you that too. These recipes are forgiving and meant to be made your own. This is grown‑folk cooking. We season properly, taste as we go, and trust ourselves. Measurements are guides, not rules.
You’ll see Louisiana roots all through this book—dark roux, slow beans, rice done right, and flavor built in layers. Cooking with Chef Poydras isn’t about perfection. It’s about confidence, flexibility, and feeding people with intention. If you mess up, fix it. If you don’t have something, substitute. The point is to cook.
