Ingredients
1 pound (450g) fresh mushrooms (such as cremini or button), sliced
1 medium onion, chopped
2 cloves garlic, minced
4 tablespoons unsalted butter
4 cups (1 litre) vegetable or chicken broth
1 cup heavy cream (or half-and-half for a lighter option)
2 tablespoons all-purpose flour (optional for thickening)
Salt and pepper, to taste
Fresh thyme or parsley, chopped for garnish -
Optional: 1 tablespoon soy sauce for added umami
Instructions
In a large pot, melt the butter over medium heat. Add the chopped onions and garlic, and sauté for about 3-4 minutes until the onions are translucent.
Add the sliced mushrooms to the pot. Cook for about 8-10 minutes until the mushrooms are softened and release their moisture. Stir occasionally.
Pour in the vegetable or chicken broth and bring the mixture to a simmer. If you are using soy sauce, add it at this point for extra flavor. Let it simmer for about 15-20 minutes.
For a creamy texture, use an immersion blender to puree the soup until smooth. If you prefer a chunky texture, you can blend only half of the soup or leave it as is.
If you want a thicker soup, mix the flour with a little water to create a slurry and stir it into the pot. Let it simmer for another 5 minutes.
Lower the heat and stir in the heavy cream or half-and-half. Heat through without boiling.
Taste and adjust seasoning with salt and pepper.
Serve: Ladle the soup into bowls and garnish with fresh thyme or parsley.
