Kapeng Barako
Ingredients
4 cups water, boiled
3.5 tablespoon Kapeng Barako
3 tablespoon sugar (brown sugar or muscavado)
Instructions
If you have whole beans, make sure that you have a coffee grinder available. Then, grind the beans according to your need.
After grinding your coffee beans, measure your water and heat it until it boils.
While waiting for your water to boil, you can measure and add your coffee and sugar to the French Press. Then, add the correct ration of hot water afterward. Note: Adding sugar to the French press is optional. You can simply add sugar later.
Put the lid on and start timing. Set your timer for 5 minutes.
After 5 minutes, slowly press the plunger down. Make sure that you press it all the way down, or your coffee will continue to brew into over-extraction.

PROCEDURE
Boil water in a pot.
Add brown sugar and let the mixture boil for a few seconds.
Remove pot from heat.
Add the Barako coffee. Stir.
Allow the coffee to brew for about 5 minutes before straining.
