Method
Preheat the oven to 180°C.
Grease and line two 8-inch cake tins with butter paper.
In a bowl, sift flour, cocoa powder, baking powder and baking soda.
Sifting ensures a smooth batter and even texture.
In another large bowl, beat eggs and sugar until light and slightly fluffy.
Add oil or melted butter and vanilla essence.
Mix well until combined.
Now add the dry ingredients in batches, alternating with warm milk.
Mix gently until the batter is smooth and lump-free.
Divide the batter evenly between the prepared tins.
Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
Remove from the oven and allow the cakes to cool completely on a wire rack.
To prepare the truffle ganache, heat the cream in a saucepan until it just begins to simmer.
Do not let it boil.
Pour the hot cream over the chopped dark chocolate.

Place one cake layer on a serving plate.
Spread a generous layer of ganache on top.
