Steps
Preheat your oven to 175°C (350°F).
Grease two 9-inch round cake pans and line the bottoms with parchment paper.
In a large bowl, sift together 250 grams all-purpose flour, 75 grams unsweetened cocoa powder, 300 grams granulated sugar, ½ teaspoons baking soda and ½ teaspoons baking powder.
Whisk until evenly combined.
In a separate jug, whisk together 2 large eggs, 240 milliliters buttermilk, 240 milliliters strong brewed coffee, cooled, 120 milliliters neutral oil (vegetable or canola), and few drops of vanilla essence until smooth.
Pour the wet ingredients into the dry and whisk gently until just combined.
Divide the batter evenly between the prepared pans.
Bake for 30 to 33 minutes, or until a toothpick inserted in the centre comes out clean.
Let cakes cool in the pans for 10 minutes, then turn out onto a wire rack and cool completely before frosting.
Make the ganache:
Place 300 grams dark chocolate (70%), chopped in a heatproof bowl.
Heat 300 milliliters heavy cream in a saucepan over medium heat until just simmering, then pour over the chocolate.
Add 30 grams unsalted butter and let sit for 2 minutes, then stir until smooth and glossy.
Allow the ganache to cool at room temperature, stirring occasionally, until it reaches a spreadable consistency.
Assemble and frost:
Place one cake layer on a serving plate and spread a generous layer of ganache on top.
Stack the second layer, then frost the top and sides with the remaining ganache.
Smooth with a palette knife or create decorative swirls.
