Do the key combination Windows key + R and type in "C:\Program Files\Epic Games\Fortnite\FortniteGame\Binaries\Win64".
Create a shortcut (Right-click and click "Create Shortcut") of either "FortniteClient-Win64-Shipping_EAC.exe" or "FortniteClient-Win64-Shipping_BE.exe". These stand for EasyAntiCheat and BattlEye respectively.
Move the shortcut you just made to the desktop and name it "Fortnite".
Now just launch your shortcut. It will take some time but Fortnite will launch from a desktop shortcut.
If the Epic Games Launcher updates when you launch your shortcut, wait until it finishes updating and the game launcher launches. It will try to load so click on the Epic Games logo and enter your login information. After you login, Fortnite will launch as expected.
