In the late 1970s, brothers John and Dan Osborn of Buffalo, NewYork wrote a musical tribute to Buffalo Chicken Wings as a parodyof early 1960's "car crash" songs. After years of singing andplaying "The Chicken Wing Song" on a piano at parties for friends,these same so-called friends raised the money to have the songproduced and distributed on the most reliable technology of theday: vinyl records. Under the shingle of Serious Dude Music andPublishing (named after the lead investor who was, and still is, a"Serious Dude") a business plan was hatched and implemented. A fullband was needed and soon the talents of arranger and guitarist BobWascura, stand-up bass player Ki Webster, and saxophonist DarrylBrown joined John Osborn (piano) and Dan Osborn (vocals) to takethe Chicken Wing Song to the next level. One thing was missingthough - the kind of back-up vocals that would recreate the flavorand feel of the early 60's "car crash" songs such as "Tell Laura ILove Her", "Last Kiss" and "Dead Man's Curve". With the arrival ofDoris Moore, Jackie Albarella and Kathy Vogel (who would foreverafter be known collectively as "The Celery Sticks"), the ChickenWing Band was complete. On a crisp Fall evening in 1982, the songwas recorded from early evening into the wee hours at Mark Recordsin Clarence, New York, and the first launch of "The Chicken WingSong" took place on Thanksgiving weekend a few weeks later.

In 1982 digital recording did not exist, nor was there any wayto distribute music other than through a physical product throughan established record label. For this independent production, itwas boxes of vinyl records and good, old fashioned "pounding thepavement" that defined the launch. Once the song was successfullyrecorded, the producers went to record stores all over Buffalo andNotre Dame, Indiana (where Dan Osborn was a student) and lefthundreds of copies to be sold on consignment. In the end, only afew hundred copies were sold, but not for lack of publicity andairplay. The song was played nationally on Dr. Demento's syndicatedradio show as well as locally on The Danny Neaverth Show on WKBW-AMin Buffalo and Notre Dame's student radio station, WVFI. Newsfeatures and interviews appeared on WGR-TV in Buffalo and WBFO, theUniversity at Buffalo's NPR station. A front page article in TheBuffalo News covered the original launch, as well as articles inUSA Today and The Notre Dame Observer. It is believed that the1980s limitations of form and distribution for independent musickept this from hitting the charts on a national level.

This is what the world has come to know as the Buffalo-style chicken wing, though in Buffalo and Rochester, most people just say "wings."

These air fryer chicken wings are so good that if you have an air fryer, whip it out and make these wings ASAP. If not, go buy one now! Seriously. I am a chicken wing lover and have tried dozens of amazing recipes. This one is way up there at the top of the list. The first thing that hits you is their extra crispy, extra flavorful deep golden brown skin. It's delicious! As you bite into the wing, the second thing that hits you is the explosion of juices. These wings are probably the juiciest wings I've ever had. They are cooked so quickly that they just don't have the time to dry out.

These wings remind me of my Extra Crispy Baked Chicken Wings. I make them in a similar way - I use baking powder to draw out moisture and dry out the skin, and I use high heat and air movement to get that browning and crisping up of the skin.

The one thing I did differently in this recipe is I salted the wings and applied the seasonings before frying. Based on my experiments, salt does make chicken skin a little less crispy, but it also significantly improves browning. I now salt my wings before cooking as I like the beautiful deep golden brown color it results in.

When it comes to air fryers, size matters big time. In general, there are 3+ quart and 6+ quart units. Mine is a 6.5-quart one and it comfortably fits 12 chicken wings, which is about 1 pound and 2 ounces of wings. Chicken wings shrink as they cook, so technically you could ft in more, crowding them slightly initially. I've gone as high as 16 wings and did not notice a big difference, although the wings came out just a tiny bit less crispy. Normally, I would place the wings on the rack leaving a little bit of space in between, even if it's a quarter of an inch. Remember, for proper cooking and browning the air needs to move freely around every chicken wing.

So, there you have it. I recommend cooking your wings at 400F - 410F, which would be the highest temperature setting on your air fryer. In a convection oven, I cook my wings at 425F, which gives me best results. Longer cooks at lower temperature only dry out the meat and result in a skin that is more rubbery. You want to cook your wings quick and hot. That's the best way.

In my air fryer, it's 20 minutes at 410F. At 400F you are looking at about 22-25 minutes. Can you believe it? I was confident that cooking wings in a air fryer would take about as long as in a convection oven, about 30-40 minutes. But I was wrong!

Air fried chicken wings are good with any of the usual sauces or dips you have been using before. In this recipe, I made the wings so they can be enjoyed as is. These wings look fantastic. I'm wondering how this would work in a full-size oven that has an "air fry" mode. (I have a Samsung range with built-in air fryer.) I am finding it difficult to locate any recipes for ovens with an air fryer setting. Including which rack to use, etc. I suppose I'll have to experiment a bit and see what works best. But I'm guessing 425-450 for the heat setting would be sufficient, and maybe one rack higher than center.

i had already salted my wings and had them in the fridge when i stumbled on your recipe and it looked like it's been what i've been waiting for since i bought my air fryer a few years ago. so, i mixed up the other spices with the baking powder, set my brio 14q to 425 for 15 minutes and voila! first wing i tried was almost there so i popped the rest in for a total of 17 minutes and they had the crispness and crunch of deep fried. gonna pull out another batch of wings and not pre-salt and as god is my witness, i'll never deep fry wings again!


Not only is this such an easy recipe but the flavor in these wings is amazing! I always make double the seasoning because I know how often I make these! Also, if you have a good buffalo sauce recipe, just pour it over as soon as they are fresh out and it turns out freaking amazing!


This wing recipe is perfect! They were crisped to perfection! My chili powder is salt-free and .5 tsp. of kosher salt was just right. I coated mine with Firecracker Sauce, which is a hotter version of sweet and sour sauce. I had to force myself from eating the whole batch. Thanks for a great recipe!

That's interesting, I thought all air fryers come with racks to get air circulation from underneath. There are generic racks that you can buy on Amazon... I got a couple of stainless ones for my air fryers from Target. If don't want to go that route, I suppose you could roll up some foil into sticks and cook wings on top of them. Don't know how well it will work but I think it should be fine.


WOW. These wings were the bomb diggity. My husband is a HUGE wing fan (and snob) and he proclaimed that these were the BEST wings I have ever made! I've tried a million different techniques and this is the first I've ever heard of adding baking soda. Just got our air fryer last month and I'm surprised how much I am liking it. I have an Ultrean Air Fryer 4.2 Quart and was able to add 8 wings (drums/flats) in at once.
