Caramel Apple Pretzel Bark Recipe
Today we are diving into the sweet, crunchy, messy world of Caramel Apple Bark—but don’t worry, it’s totally dairy-free and totally delicious! Think of it like caramel apples, but way less work. We’re talking layers of chocolate, crisp apples, salty pretzels, and a drizzly peanut butter caramel that is so good, you might end up eating it with a spoon before it even makes it onto the bark (no judgment here—I may have done that once… or twice).
1 cup apple, chopped into bite-size pieces (Granny Smith is my preferred pick, but any firm apple will do)
1 cup dairy-free chocolate chips
1 tbsp coconut oil
1 cup mini pretzels, roughly broken
For the caramel drizzle:
½ cup maple syrup
½ tsp vanilla extract
2 heaping tbsp coconut oil
4 tbsp peanut butter (smooth works best)
Prep apples: Chop 1 cup of apple into bite-size pieces. Pat them dry with a paper towel to remove excess moisture (this helps the bark set better).
Melt chocolate:
In a microwave-safe bowl, combine 1 cup dairy-free chocolate chips and 1 tbsp coconut oil.
Microwave for 30 seconds, stir, then repeat in 30-second intervals until fully melted and smooth.
Spread chocolate base: Pour the melted chocolate onto a silicone or parchment-lined baking sheet. Spread it into an even rectangle (about ¼ inch thick).
Add toppings: Sprinkle the chopped apples and broken pretzels evenly over the chocolate while it’s still warm. Gently press them down so they stick.
Make the caramel drizzle:
In a microwave-safe glass bowl, add ½ cup maple syrup, ½ tsp vanilla extract, 2 heaping tbsp coconut oil, and 4 tbsp peanut butter.
Microwave in 20–30 second intervals, stirring between each, until melted and smooth.
Drizzle caramel: Spoon or drizzle the caramel mixture over the bark, letting it fall randomly across the top.
Freeze: Place the pan in the freezer for at least 1 hour, or until completely solid.
Cut & enjoy: Once firm, remove from freezer, cut into bark pieces, and enjoy!
In the freezer: Best stored in an airtight container in the freezer. Lasts up to 2 weeks.
In the fridge: Can be kept in the fridge for 3–4 days, but apples may soften and release moisture.
Extra crunch: Add chopped nuts (walnuts, pecans, or almonds) along with the pretzels.
More fall flavor: Sprinkle a little cinnamon or pumpkin pie spice on the apples before adding.
Fruity twist: Swap apples for pears or dried fruit like cranberries or cherries (they won’t get mushy as quickly).
Drizzle fun: Use melted dairy-free white chocolate in addition to the caramel for a pretty two-tone effect.
