Enjoy the sweet and sour/zesty limes as desert with tea or in lemonade
Wash and dry limes
Slice limes thinly
Place lime slices and sugar in a jar in alternate layers. Use sugar generously. Sugar will dissolve in lime juice over time
Keep the jar in a sunny place but make sure it doesn't get too warm. You don’t want to cook the limes.
After 1 month try the limes to find out if the sweet and sour are balanced and the lime skin is not too strong. Based on the storing condition it may need more time to get ready to use. When it’s ready to use store it in the refrigerator.
