Photoshopping something is when you take a photo and add or delete something that is in the background of the person that you want to be in the background. An example of this would be to take a photo of someone and lets say they have a background with some other people in it. To photoshop that picture they could either take all the other people out of the photo, add another background, add someone to it, or even move the image of the person in the photo.
