Cadillac Cowboy Left Us Disappointed With Dry BBQ And Lackluster Service
My Night at Cadillac Cowboy in Lake Arrowhead Left a Bad Taste
We drove up to Lake Arrowhead for a weekend getaway and decided to try Cadillac Cowboy after seeing the photos of the patio and smoked meats. The location looks great on social media. The actual experience was another story.
The Food That Didn’t Match the Hype
We ordered the ribs and a brisket sandwich, figuring those would be the safe choices. The ribs arrived looking dark and dry. The first bite was tough and slightly burnt on the edges. They weren’t fall-off-the-bone. They were chewy and had that overcooked flavor that sits in your mouth. When we mentioned it, the server shrugged and said something about the smoker being busy. Not exactly reassuring.
The brisket sandwich was better than the ribs but still underwhelming. The meat was okay, yet the portion felt small for the price, and the bun was already getting soggy. The mac and cheese on the side was lukewarm and lacked any real flavor. For a place that leans hard on its BBQ reputation, the food felt more like average bar fare than something worth the drive.
Service That Made Everything Worse
Our server started off friendly enough, but after the food came out the attention disappeared. Drinks took forever to refill. When we asked about the cold spots on the ribs, the response was half-hearted. At one point we watched the bartender spend several minutes chatting with someone at the far end of the bar while other customers waited. It wasn’t malicious, just careless, and it set the tone for the rest of the meal.
The patio has a nice view of the water, which is probably the best part of the place. Unfortunately the music was turned up so loud that conversation required leaning in and nearly shouting. What should have been a relaxed lakeside dinner turned into a noisy, slightly frustrating experience.
The Price Didn’t Help
Nothing on the bill felt like a bargain. For the quality we received, the total seemed high. We left still a bit hungry and already talking about where we should have gone instead. In a mountain town with limited options, places can get away with more, but that doesn’t make the meal feel any better when you’re the one paying for it.
Would We Go Back?
Probably not. The concept is fun on paper — country music, smoked meats, lake views — but the execution on our visit fell short. Burnt ribs, average sides, slow service, and loud music added up to a night that felt more disappointing than memorable. If you’re heading to Lake Arrowhead and want solid BBQ, it might be worth looking at other spots first.
