The Breville BOV845BSS Smart Oven Pro stands out as my top pick among breville convection ovens for its perfect balance of power and practical versatility. If you need a dedicated air frying capability alongside your baking, the Breville BOV900BSS is the superior alternative that offers extra internal volume and super-convection control.
• Breville BOV845BSS — best for balanced daily cooking; pick this if you want a reliable workhorse with ten functions and a large interior that fits a whole chicken or a Dutch oven without needing the extra bulk of an air fryer model.
• Breville BOV900BSS — best for serious home chefs and large families; pick this if you need the largest possible capacity for a 14-pound turkey, four dehydrator trays, and the specific airflow needed for high-performance air frying.
• Breville BOV860BSS — best for compact kitchens needing air frying; pick this if you want the speed of super convection and air frying in a footprint slightly smaller than the Pro model while still handling a 13-inch pizza.
The Breville BOV845BSS Smart Oven Pro is the definition of a versatile countertop companion. It brings together the functionality of a toaster, a pizza oven, and a standard baking tray into one sleek unit finished in brushed stainless steel. At its core is the Element iQ System, which utilizes five independent quartz heating elements. This isn't just marketing fluff; it means the oven can direct power exactly where it is needed to create a tailored cooking environment. Whether you are searing a steak or slowly braising a roast, the smart algorithms ensure the heat is distributed precisely rather than blasting everything equally.
What makes this model particularly compelling for the everyday cook is its ten distinct cooking functions. You get Toast, Bagel, Bake, Roast, Broil, Pizza, Cookies, Reheat, Warm, and Slow Cook. The inclusion of a slow cook function is a standout feature that separates this from many cheaper competitors. You can set it to tenderize meats and develop complex flavors for up to 10 hours before it automatically switches to keep warm. The interior light also plays a crucial role here, turning on automatically at the end of the cycle so you don't have to open the door and lose heat to check on your progress.
In terms of physical utility, the interior space is generous enough to handle substantial meals. The cavity accommodates six slices of bread, a 13-inch pizza, or a full roast chicken. I find the capacity ideal for feeding a family without taking over the entire counter. The convection setting specifically reduces cooking time by up to 30% because an inbuilt fan circulates hot air, stripping away the cold pockets that often surround food.

If your kitchen needs to do more than just bake and toast, the Breville BOV900BSS Smart Oven Air Fryer Pro takes things to another level. This unit expands the capabilities significantly with thirteen cooking functions, adding Proof, Air Fry, and Dehydrate to the standard list. The key differentiator here is the Super Convection Technology, which features a two-speed fan. You can choose between regular and super settings to maximize airflow, ensuring that when you are making crispy French fries or roasting a large bird, the heat distribution is rapid and even. This eliminates cold spots through digital PID temperature control, giving you precision that feels professional-grade.
The interior capacity of the BOV900BSS is its most defining feature. With dimensions that allow for a 14-pound turkey, this is the only option listed that truly opens up for large-scale entertaining. It fits most 9x13 inch pans and 12-cup muffin trays effortlessly. Furthermore, the ability to dehydrate up to four trays of food simultaneously is a game-changer for anyone who enjoys making jerky, dried fruit, or rehydrated vegetables at home. The LCD display remains intuitive, guiding you through pre-heat cycles and countdowns, but the sheer amount of real estate inside changes how you approach meal prep.
This model is designed for the cook who wants to replace multiple appliances entirely. You can air fry, dehydrate, and slow cook in the same space where you would usually need separate machines. It is less about saving space and more about maximizing capability. If you frequently cook for crowds or have specific hobbies like dehydration, the extra bulk is a small price to pay for the flexibility this oven provides.
The Breville BOV860BSS Smart Oven Air Fryer sits comfortably in the middle ground, offering high-end performance in a slightly more compact package than the Pro version. Like its larger sibling, it boasts the Element iQ System with five independent quartz elements and sensing technology to eliminate cold spots. It introduces the dedicated Air Fry setting, allowing you to make guilt-free versions of favorites like wings and fries using higher temperatures combined with super convection. The result is the crispy, golden texture you expect from deep frying without the oil mess, all within a countertop oven.
Its eleven cooking functions cover the essentials well, including Toast, Bagel, Broil, Bake, Roast, Warm, Pizza, Air Fry, Reheat, Cookies, and Slow Cook. The interior capacity matches the standard BOV845BSS, holding six slices of bread, a 13-inch pizza, or a 4.4-quart Dutch oven. This makes it an excellent choice for those who want the air frying benefit but have limited counter depth or width. The super convection fan speeds up the cooking process by circulating hotter air, reducing overall cook time by up to 30%. It feels like a streamlined version of the Pro, cutting out the extra dehydrating trays but keeping the core performance intact.
I recommend this model for apartments or smaller kitchens where every inch counts but you still refuse to compromise on cooking quality. It delivers the same precise temperature control and smart functionality as the larger models but in a chassis that feels less imposing. The main limitation is that you cannot fit the massive 14-pound turkey or the four-dehydrator setup found in the BOV900BSS. If your primary goal is quick weeknight dinners, air frying sides, and baking standard-sized goods, the BOV860BSS hits the sweet spot of performance and size.
