Our Ceylon Cinnamon Extract is made with just two ingredients- alcohol and organic Ceylon Cinnamon. After the extract has been developed, it is strained (not filtered) and bottled. Why the Ceylon variety you ask? All varieties of cinnamon have been researched and proven to be helpful for numerous health conditions. Most of what typically consumed by Americans is the Cassis variety which is known to have toxic levels of coumarin which can have significant effects on the liver. "Even though very expensive, Ceylon cinnamon is preferred due to its ultra-low coumarin levels" (1).
