CARLA - The University of Minnesota's Center for Advanced Research on Language Acquisition features a database of postsecondary institutions in the United States that teach less commonly taught languages. There is also a section on developing classroom materials for teaching LCTLs.
SEELRC - Duke University’s Slavic and Eurasian Language Resource Center (SEELRC) develops teaching materials and maintains a list of digital resources for some 40 Slavic and Eurasian languages.
