Simple Gallery - Easily the best gallery app. So many great features. I love the edge-tap-to-change-images, QuickPic like simple, nice layout, trash support, grouping, folder ordering, toolbar and UI customization, the editor is really great too (but sometimes it messes up quality of the pic), extended details overlay is nice (you can overlay extra details on the image you're viewing, like image size, dimensions and other EXIF data). It's got lots of great features and there is nothing else that comes close to this for me. Second most important.
Yahoo Mail - I love Yahoo mail app. You would not think it because it's Yahoo, but this app is so well thought out. You can create sub-folders, a proper folder hierarchy. Supports reminders, folder navigation is very well thought out. You can add your other email accounts too. UI is beautiful and fast. Nice themes. To me this is the best email app by far. I've tried a few of them, none can replace this for me.
SnapSeed - Again, there is no app that offers the same features as simply as SnapSeed does. No need to register or do anything and it has a very powerful toolset, including the healing tool, which I use a lot and not many apps have it.
