Challenges faced by sous-chefs


The sous-chefs at the Battle of Tables culinary competition must be quick and efficient when it comes to making food. The challenges include deboning a chicken or salmon in 15 minutes, opening a coconut to produce coconut milk, shucking six oysters and clams, Frenching a rack of lamb, and slicing a 4-inch strip of daikon thin enough to read newsprint. In addition, they must make two desserts using only savory ingredients.


In addition to the usual head-to-head competition, the sous-chefs also had to overcome challenges, including the Secret Ingredient Challenge. Chefs had to use a secret ingredient to create a portable snack for their patrons. Another challenge, called the Chairman's Challenge, required the chefs to create two dishes with fish as their main ingredient.
