When we describe the VitaMethod™ as being natural or raw, you must consider the following. We borrow technology from sausage, jerky, cheese, and wine making. Our process does not include any salting/brining, or chemical preservatives. While we do consider it to be raw, you must bear in mind that fermentation alters the molecular composition. Fermentation is an enzymatically controlled transformation of organic compounds. We introduce all of the fruits, vegetables, herbs, fish, and meats, into the fermentation process, fresh whole and raw. We rely on molecular binding (cross-linking bonds) during the process to control respiration and condensation of moisture (aka water activity) to preserve and maintain freshness naturally. The fermentation process is a form of predigesting. It makes it easier for dogs and cats to assimilate (e.g. wild prey stomach and intestinal tract contents: acronym IT) which is also a fermentation process similar to the VitaMethod™. That is where we achieve the huge gains of metabolic efficiency (e.g. low consumption, high absorption, low organic depleted stools). The basic fermentation takes about 4 weeks in a state of emulsion divided into bio-reactors (wine vats). Over this period, excess moisture is purged off and then agitated every other day for the first 15 days, until it is thickened where it can then be rolled out like clay and die cut. Then at this point, we begin the curing process which takes about four days give or take depending on atmospheric conditions. It is a cool low-light process likened to wine making. This process leaves enzymes and antioxidants intact.

It is crucial to know that both the good and the bad microorganisms live in the intestinal tract. Their link is symbiotic but complicated as they control one another's populations. There are many types of bifidobacteria. The four that are paramount in this group are B. breve, B. infantis, B. bifidium, and B. longum. Since enzymes are so important, it only makes sense to make sure pets have enough of them. Eating everything raw is certainly one way to maintain enzyme levels; however, for most pets, it simply isn't practical. Some important enzymes are in raw meat which other pet foods do not contain. It is important to remember that pets inherit an enzyme reserve at birth. This reserve can be decreased as they age by eating an enzyme-deficient diet. Enzymes have a limited life and must be replaced regularly. Unfortunately, if you cook food at temperatures exceeding 129 Fahrenheit, all the enzymes are destroyed. By consuming cooked pet foods, their digestive systems have to produce all of the enzymes. While dogs and cats can produce some enzymes, the range is limited far below human capacity. To supply such enzymes, their body draws on its reserve from all organs and tissues, causing a metabolic deficit. Orthomolecular veterinarians have concluded that most dogs and cats succumb to disease and illness due to weakened immune systems. What weakens the immune system? Stress, poor nutrition, drugs, chemical pollution; but most of all lack of particular enzymes. The immune system's function is to fight off all foreign invaders in the body such as bacteria, viruses, carcinogens and other chemicals. The body relies almost totally on enzymes to do its job. Enzymes in their immune system attack waste materials and poisons in the blood and tissues. There is a direct connection between the strength of a dog and cats immune system and their enzyme level. A weakened immune system has a diminished volume of enzymes including those that are defective or worn out. The greater the amount of enzyme reserves, the stronger the immune system, the healthier and stronger your pet will be. The number of enzymes in a pet's body is vast, and yet each one has a specific function. Enzymes are healthful, protein-like molecules with catalytic activity essential to life. There are three classes of enzymes: metabolic enzymes, which run their bodies; digestive enzymes, which break down food to make it available for their body to use; and food enzymes, which occur naturally in food and also help to break it down.

Digestive enzymes have three main functions: digesting carbohydrates (mylases), digesting proteins (proteases), and digesting fats (lipases). When uncooked, food enzymes naturally assist the enzymes produced by their bodies for digestion. Some veterinary research cites enzyme deficiency as a significant cause of premature aging and degenerative diseases. This is attributed to metabolic stress and organic imbalance caused by lack of enzymes. On a lesser scale, poorly digested food can block nutrient absorption and produce toxic by-products. Minor discomfort such as gas, bloating, headache, nausea, intestinal cramps, and diarrhea, commonly result from internally produced toxins. Because some petss simply do not produce enough enzymes for effective digestion, this condition tends to become more common and increases with age as the pets body makes less enzymes of its own. Enzymes play an important role in the immune system. A pets body, however, rates digestion as a higher priority than immunity. Therefore, modern enzyme deficient diets weaken the immune system.
