Method
Preheat oven to 175°C / 350°F. Line a 12-cup muffin tray with paper liners and set aside.
In a bowl, whisk together flour, and baking powder until evenly combined.
Cream butter and sugar in a stand mixer (or with a hand mixer) on medium-high speed for 3–4 minutes until the mixture is pale and very fluffy.
Beat in eggs one at a time, then add few drops of vanilla essence.
Add pinch of yellow food color and mix until the batter is a uniform sunny yellow.
Add flour mixture in three additions, alternating with milk, beginning and ending with flour.
Using a rubber spatula, gently fold the diced fruit into the batter so pieces are distributed without releasing too much juice.
Divide batter evenly among liners (about ⅔ full).
Bake for 18–22 minutes until a toothpick inserted in the center comes out clean.
Cool completely on a rack before frosting.
Make yellow buttercream
Beat softened butter for 2 minutes.
Gradually add powdered sugar, then cream and few drops of vanilla essence.
Add pinch of yellow food color and beat until smooth and fluffy.
Decorate
Pipe or spread frosting onto cooled cupcakes.
Finish with fresh fruit on top and serve immediately or refrigerate for up to 2 days.
