Chickpea and Red Lentil Dahl
To make this a shelf stable meal: 1 can crushed tomato, 1 can chickpeas, 3/4 cup red lentils, spices, 1 cup rice

Ingredients
1 can crushed tomato
1 can chickpeas
3/4 cup red lentils
3 cups water
2 tsp salt
1 tsp mild curry powder
1 tsp cumin
1 cup rice
Want more: Add in a can of mixed vegetables or a can of carrots and peas to the pot!
Directions
In a stockpot over medium-high heat, add all ingredients and boil until lentils are tender
Or - In an instant pot - add all to pot and set Multigrain to 40 mins.
Serve over cooked rice ( cook at 1:2 ratio rice to water until rice is tender)
