Black beans and Rice

To make this a shelf stable meal: 2 cans black beans, 3/4 cup rice, spices, stock cube and oil

Ingredients
1 teaspoon olive oil
2-4 tbsp dried onion
1/2 tsp powdered garlic
¾ cup uncooked white rice
1 ½ cups low sodium, low fat vegetable broth, or 1 stock cube + 1.5 cups water)
1 teaspoon ground cumin
¼ teaspoon cayenne pepper (optional)
2 cans canned black beans, drained
Directions
Step 1
In a stockpot over medium-high heat, heat the oil. Add the onion and garlic and saute for 4 minutes. Add the rice and saute for 2 minutes.
Step 2
Add the vegetable broth, bring to a boil, cover and lower the heat and cook for 20 minutes. Add the spices and black beans. Cook until thoroughly heated.
