It may take a monster 2-3 months at most to be infected if they are lucky, but for humans it can take years. Due to the strength of a human soul, and their form being more physical based, the hunger's infection process is extremely slower

After a nasty fall, Aliza lost four of the souls she fell down with. The soul jar she had cracked and they escaped. She now has three souls left. If Flowey were to get his hands on the remaining souls, he would be as strong as-or stronger than his original power with the six souls.
