My mom wasn't a great cook but there are a few things she made where I think her version is the best I have ever had. This banana bread is one of those things. My daughter requests it specifically as "Nana banana bread"
TIME
Prep time - maybe 15 minutes, likely less if you know where everything is 😊
Cook time - 1 hour 45 minutes - 2 hours
Cooling time - depends on your level of self control but try and make it 15 minutes at least
EQUIPMENT YOU WILL NEED
Electric mixer (or stand mixer)
Measuring cups and measuring spoons
Mixing bowl or bowl of stand mixer
Oven (seems obvious but just in case)
Spatula
Two loaf pans (if you only have one, your baking time will be 4 hours)
INGREDIENTS YOU WILL NEED
2 cups of very ripe bananas (the riper the better, 2 cups is about 6 medium banana)
3 cups + 3 1/2 Tbsp sugar
1 Tbsp baking soda
1/4 tsp salt
3 cups + 2 Tbsp all purpose flour
4 eggs
1/2 cup + 4 tsp milk
2 tsp lemon juice
1/2 cup vegetable oil
METHOD
Preheat oven to 275, grease two loaf pans (I just spray with cooking spray but my mom used to rub the pans with oil.
Put your milk in a bowl or cup and add the lemon juice to the milk.
Peel and mash the bananas in your mixing bowl.
Add sugar, baking soda, and salt. Beat well.
Beat in the flour and eggs until the mixture is well combined.
Add the oil and milk/lemon mixture and continue to mix until everything is well incorporated.
Pour into greased pans.
Bake at 275 for the first hour, then lower the temperature on the oven to 225 and bake for another 45 minutes to one hour, depending on your oven. (My mom's recipe says an hour, my oven only needs 45 minutes)
Remove the loaves from the oven and let them cool for a while. At this point my house smells so good that I never make it too long before I am cutting off a nice thick slice, putting some butter on it and enjoying! The bread should be pretty dark in colour and very moist.
This is my mom's recipe card, written in her hand writing and only meant to be followed by those of us who actually already know how to make this but just need a little reminder. My mom died in December 2023 and it is amazing how precious these images are now.
