High Protein Pasta
Cottage cheese is enjoying its time in the spotlight, thanks to its high protein content that has inspired many to include it in their favorite dishes. When blended with a simple marinara sauce until creamy and smooth, it creates an exceptional pasta sauce. This simple trick offers a protein-rich twist to a beloved comfort food. Plus, the recipe can be prepared in under 30 minutes, making it a perfect choice for a quick and satisfying weeknight meal.
- 500g penne / pasta of choice
- store-bought/homemade marinara sauce
- 230g low-fat cottage cheese
- finely grated Parmesan
- 1tbs olive oil and salt to taste.
Step 1: In a large pot of boiling salted water, cook pasta, stirring occasionally, until al dente according to package directions. Drain; reserve 1/2 cup pasta water.
Step 2: Meanwhile, in a blender, blend marinara, cottage cheese, Parmesan, and oil until smooth.
Step 3: Return pasta to pot and add sauce and 1/4 cup reserved pasta water. Toss, adding more pasta water as needed, until pasta is coated and sauce is warmed through.
Step 4: Divide pasta among bowls. Top with Parmesan.
