1 (5-6 pounds) whole chicken
3 Tablespoons of herbs and spices of your choosing, halved
1 lemon, halved
1. Preheat oven to 400° F.
2. Remove giblets from the chicken, reserve for later use.
3. Spray the bottom of a large roasting pan with cooking spray.
4. Place the chicken in the roasting pan breast side down. Add half the seasonings.
5. Add lemon halves to the inside cavity. (Putting them in a clean nylon stocking allows the juices to come out but keeps the seeds in place.)
6. Put the roasting pan in the oven so that the chicken is centered in the oven space.
7. Cook for about one hour.
8. Turn the chicken over, add the other half of the seasonings, and cook for another 45-60 minutes.
9. Test for doneness using an instant read thermometer in the thigh not touching the bone - 165° F.
10. Let the chicken rest for 5-10 minutes. Remove the stocking with lemon halves.
11. Enjoy.
