Juniper & Ivy
We had the chance to interview Chef Khine Moore, Head of Innovation at Juniper & Ivy. His story is truly inspiring, starting out as a worker at Subway and working his way up to his position at Juniper & Ivy. All the dishes are influenced by the chefs’ travels around the world. For example, the muchame (first image) was inspired by Chef Khine Moore’s recent trip to Peru, where he explored the culture and cuisine. Each dish was beautifully crafted with attention to detail, using mostly local, fresh ingredients to enhance flavors. They maintain transparency and take pride in their ingredient sourcing, as seen in Slide 12 on their menu.

We interviewed the manager at the UCSD Price Center Panda Express.
Based on insights from her, the corporate for PE does not care too much for or have any elaborate plans of incorporating sustainable sourcing into the ingredients they send over to their locations.
At the store level, they do try reduce food waste by ordering accurate amounts of ingredients based off of past order frequencies, and she said that they have been pretty good about that.
They also try to give out leftovers to university employees at the end of the day.
All the meats are received frozen and then thawed, however all the vegetables are received fresh.
Somi Somi
We interviewed the person working at the front counter. Somi-Somi is an ice cream parlor themed around the fish-shaped Japanese pastries called Taiyaki.
Their flavors include horchata, black sesame, and salted caramel, and their toppings include graham crackers, matcha powder, and strawberries.
We learned they receive weekly resupplies of their ingredients from a wholesale company called Sysco.

San Diego Salsa
We interviewed Ryan Bony, a San Diego local who has been working in the grocery store industry for over a decade, and has transitioned to selling homemade salsa, chips, and marinated meat.
He keeps his products fresh by only cutting his produce just before turning them into salsa, and by selling them immediately afterward.
He estimates he wastes only about 5% of his product a week.
He has noticed Costco typically has the best tomatoes, so he sources his tomatoes from there. He also buys some ingredients from Rolando's Distribution.
He has noticed rising costs in produce, and attributes them to Tariffs. He also said it seems sensible that climate change has contributed to rising costs as well.

The location of the restaurant was in an office building, geared primarily towards the employees. The atmosphere incorporated many elements of urban nature, from the real plants inside to the garden outside.

Future Directions & Remaining Questions
This project is OPEN for expansion
We might suggest interviewing wholesaler companies to learn how they choose their food suppliers, and how they choose to distribute their food.
We also would suggest interviewing restaurants that do source their food locally to learn what challenges there are in getting food from local sources.
We were curious how chains like panda express could pivot to local sourcing, so learning more of the nitty gritty details of their cooking procedur could be helping in coming up with a way to help them be more sustainable without disrupting business.
Sustainable Restaurants to Eat At
Sweetgreen values clean energy, local sourcing, and sustainable packaging.
Chipotle focuses on sourcing ingredients from ethical and sustainable producers.
Farmer's Table takes pride in being a "family-friendly farm-to-fork destination," using only local organic ingredients in their dishes.
