There will be significant sections of the conference dedicated to discussion and collaborative writing. A laptop or other mobile device with a good keyboard will likely be valuable.
Are you familiar with the demographics of students on your own campus? It would be helpful if you were able to provide the following information:
What percentage of your students are Hispanic? Who on your campus has the numbers about Hispanic student success in STEM? Can they provide these numbers to you?
What support services are available for students on your campus, whether directly "Hispanic supporting" or not? How successful are they?
What are the common challenges for your Hispanic students? Examples might be lower math skills, or the lack of family support common to first-generation students. What are some of the strengths and benefits you have seen that Hispanic students bring to your campus?
