Our research seeks to better understand how different dietary sources of potassium affect individuals with chronic kidney disease (CKD). Currently, healthy, fresh foods or minimally processed foods are often limited in the diet of people living with CKD. We will examine how much potassium is present in various foods and how well the body handles it from both fresh foods or minimally processed foods (e.g., fruits and vegetables) and processed foods (i.e., made in factories, such as canned food and ready-to-eat frozen meals). Our goal is to help support more balanced, healthful diets for people living with CKD.
