Entry requirements: GCSE Chemistry Grade 6 or above. GCSE English Grade 6 or above. GCSE Maths Grade 6 or above. GCSE Grade 6 in Food Preparation and Nutrition, a Merit in NCFE VCERT Food and Cookery or similar

Level 3 Diploma: This course provides an in-depth study of food science and nutrition and its application within professional fields. Students will be required to provide ingredients for demanding practical tasks on a regular basis. The course requires enthusiasm, hard work and the ability to work independently.

Unit 1 Mandatory (completed in 1st Year)

Meeting Nutritional Needs of Specific Groups (Internal & External Assessment)

  • The external assessment is a 90 minute exam (plus 15mins reading time)
  • The internal assessment is a piece of controlled assessment linked to nutritional planning.
  • Students learn about nutrients, relationship between nutrition and health and develop skills of nutritional planning for groups.

Unit 2- Mandatory (Completed in 2nd year)

Ensuring Food is Safe to Eat (External)

  • This is set on 1st March by the exam board and is completed in 8hours supervised time
  • Students will develop an understanding of hazard, risk assessment, and inputting controls to minimize these risks

Unit 3- Optional (Completed in 2nd year)

Experimenting to solve Food Production Problems

  • This is an internally assessed controlled assessment project
  • This looks at the chemical and functional properties of ingredients and understand the changes these undergo when cooked.

Unit 4- Optional (Completed in 2nd year)

Current Issues in Food Science and Nutrition

  • This is an internally assessed controlled assessment project
  • Students will learn to plan, carry out and present a research project on current issues linked to food science and nutrition from the view of a consumer, manufacturer or policy making perspective.
