The origins of Chaat can be traced back to ancient times. There are a lot interesting stories about Chaat that our Guruji taught us while we were still in training under him, studying & perfecting the "Knowledge of Spices" as he liked to call it. "Focus on measuring and adding to your masala to mixtures. This is science. Each masala gives a special taste in your mixture. Some are going to be stronger than others but all them come together to create the greatest symphonies of all" advised our guruji, every time I made the blunder of free-handing or putting in pinches of my favored spices.
"This is not pure science, guru ji", I argued in one of our training sessions. "How so?", i guess he knew the answer but he still gave me a chance to vent in out. I continued "Well there are so many people making Chaat across the country, countless people exploring the same process that we are and yet they all taste different. They all use different mixtures and different processes. If this were science, then all of them should taste the same". Guruji smiled and said " you are absolutely right, but to get to that level of expertise and to create your own taste you must train for now and understand the undertones and overtones of how different spices work", I heard a whip and felt a little pain. "On with the training", I might still have that mark somewhere on my left leg.
"Chaat is like a freshly dressed bride just before her wedding, no amount of "Shringaar" is enough compared to what she's feeling on the inside. You can never go too far or over the top with Chaat decorations"
