Katz is a Houston - based coffee roaster. On our club field trip in April 2018, Will showed us around their large facility and gave us the run-down on their process. Not only did we get to see the roasting machines, we also got a walk-through of the warehouse where they keep thousands of pounds of fresh coffee waiting to be roasted! In the front of their facility, Katz has a free coffee bar for customers to try before buying. It is a really neat setup, with state of the art espresso machines, coffee-themed furniture, a vinyl collection, and much more. If it weren’t such a drive from College Station, it would be the perfect study spot!
In addition to our facility tour, we also learned how to smell and taste better! We learned about the flavor wheel and tried to pinpoint certain flavors. We learned about what it takes to be specialty coffee, and we even got to cup some! There is an objective scoring system that we learned about and attempted to complete during our cupping lesson… It turns out that we need a lot more practice, so we plan to return to Katz in the near future.

This quaint little coffee shop in Llano, Texas turned out to be more than it seemed at the door. It is actually a community gathering spot that is run by the local churches. All profits from the coffee benefit church outreach programs such as feeding the hungry.
What you see here is an iced Amaretto Breve. This was my first breve, which is like a latte but with half & half instead of milk, and I would highly recommend that you try one if you ever have the chance. Breves are creamier and richer than lattes; it's almost like drinking melted ice cream!

During the summer of 2018, Ben Watzak had an internship in San Antonio, Texas where he had the opportunity to explore the local coffee scene.

This local roasting facility is dedicated to quality over quantity. Their seemingly small-scale operation is very important to the San Antonio area, especially given that the resident roaster at Estate Coffee learned the tricks of the trade while working at Brown. I tried several interesting items, the first being one of their refreshing summer beverages: cold brew, tonic water, and cane sugar. I next had a pour over of their newest roast: Las Delicias, which is an experimentally processed bean from El Salvador (the bags of which had only arrived on their doorstep 4 days before)! Solomon, the roaster on duty when I visited, not only gave me a rundown of the company's history, but also showed me around their facility. We hope to bring these guys to one of our meetings in the future!

They make their own Moon Milk, which is very comparable to Starbucks's vanilla sweet cream (only much better). They also roast their own coffee in Austin using wood! P.S. they have nitro cold brew on tap! We also received a generous donation of their wood-fire medium roast, featured in the photo!

This unique find is a two-story coffee shop with an exposed-brick and exposed-beam interior that gives the shop so much character. They also feature a seasonal flavor for lattes, etc. that I couldn't possibly ignore... I purchased a lavender latte, and it was to die for!

They had a Dulce de Leche latte. Thus far, that is the most creative coffee flavoring syrup I have seen/tasted. ... {Update: Rosella had the most creative flavor syrup.}

These guys roast their own coffee in house; you see one of their roasting machines as soon as you walk in the door. They have a simplistic menu, no added flavors to be found because they aren't necessary. I purchased an iced latte (it was 100 degrees outside), and it was the best one I have ever had!
