Dr. Flavio Ribeiro is a research scientist in the Animal Science Department at Prairie View A&M University. Dr. Ribeiro is a native of Brazil, and every year, Dr. Ribeiro is invited to Texas A&M University Texas Barbecue class to lead an instructional seminar on Brazillian Barbecue.
Dr. Ribeiro begins his presentations by discussing the population, geography, and culture of Brazil. He explains how different breeds of cattle can generate different cuts and flavors. Dr. Ribeiro taught us about the cooking and seasoning of the products.
