The weather is finally starting to change, and so are our cravings! Fall is the perfect time to get into baking; from the weather and scenery outside to the cozy feeling inside. Here is one of the coziest cookie recipes that will leave you with a cozy warmth inside. These cookies are perfect for eating alone or sharing with the ones you love.
Pumpkin Spice Cookies with Cream Cheese Frosting
For this recipe, you will need the following ingredients for the cookies:
2 ½ cups of all-purpose flour
1 tsp baking soda
1 tsp baking powder
A pinch of salt
½ cup of brown sugar
½ cup of granulated sugar
1 Tbsp of cinnamon
¼ tsp of ground nutmeg
¼ tsp of ground cloves
1 tsp of vanilla extract (or measure by heart)
½ cup of unsalted butter, but make sure it's softened.
1 cup of pumpkin purée
After preparing the ingredients, you can start combining them one by one, as there isn't a specific order in which it should be done. Once all the ingredients are all mixed together, prepare your dough. If your dough is too runny or you want thicker, chewier cookies, refrigerating the cookies for 30 minutes to an hour would help the dough. Then, bake the cookie dough at 350 degrees Fahrenheit for 14 minutes.
For the cream cheese frosting, you will need:
4 oz of cream cheese at room temperature
2 Tbsp of butter
1 Tbsp of milk
½ tsp of vanilla extract
½ cup of powdered sugar
By the time the cookies are out of the oven, the frosting should be ready. For the best results, you should put the frosting in the refrigerator while the cookies cool down. Once you're ready, you can begin frosting the cookies, and if you want to elevate it, you can add some dashes of cinnamon. The final step is to get cozy and enjoy the cookies with someone special or by yourself.
