Vietnamese Pork Ragout-Lagu Thit

Cooking Time

Instant Pot Method 30 minutes

Stove Top or Slow Cooker method about 2 hours

2 1/2 pounds pork shoulder

4 large Yukon red potatoes

4 mediums carrots

2 cups snow peas

Note: when using the pressure cooker method make sure the sliced potatoes and carrots are similar in

size so they cook evenly. When using a stove top or slow cooker method do the following:

1)replace pressure cooking with simmering on low heat.

a. simmer pork slices until almost fork tender

b. when meat is almost fork tender add sliced carrots and continue to simmer until carrots are almost fork tender then add sliced potatoes.

c. snow peas cook quickly so add them last after meat, carrots and potatoes have cooked to a fork tender.

The Broth

Ingredients:

1 6oz can tomato paste

6 garlic cloves

1 shallot

3 14.5oz cans chicken broth Or 5.5 cups

Pork Marinade

Ingredients:

6 garlic cloves (chopped)

1 shallot (chopped)

2 tablespoons oyster sauce

1 1/2 tablespoons fish sauce ( brand phuc Quoc)

1 tablespoon mushroom seasoning

2 tablespoons plus 1 teaspoon crushed rock sugar (1 .2 oz rock sugar)

1 teaspoon crushed black pepper
