Introduction

I chose to do the chemistry of M&M’s due to my love for candy. Choosing one specific candy was not easy, but it soon became apparent that M&M’s were at the top of the list of favorites.

Milk chocolate(sugar, chocolate, skim milk, cocoa butter, lactose, milkfat, soy lecithin, salt, artificial flavors), sugar, cornstarch, less than 1% - corn syrup, dextrin, coloring(includes, blue 1 lake, red 40 lake, yellow 6, yellow 5, red 40, blue 1, blue 2 lake, yellow 6 lake, yellow 5 lake, blue 2), gum acacia.

Chemistry's Role

A more technical term for sugar is Sucrose, which contains fructose and glucose. Sugar can be obtained from a natural source, but it is also possible to create it in a lab. Milk is also another natural source, obtained from cows.

Background Research

M&M’s are made in a very simple, easy process. The liquid chocolate that is used to make the insides of the M&M’s are poured into molds. Before than can fully harden, the candies are rolled around to make sure that the inside pieces turn out perfectly smooth. Once they have hardened, they are then transferred to the “panning” area where the smooth center pieces will be coated with the outside layer of the M&M. That is the simple process in which M&M’s are made.
